Fruit is sorted on the 2 m bench, washed in the air-bath unit, blanched 2–3 minutes in 500 L tank to soften flesh, elevated to the two-stage pulper which removes peel and seeds, fed to the tilting jacketed pan for concentration to 22–24% soluble solids with continuous agitation, then transferred via screw pump to the 200 L high-shear emulsifier for blending. Finished jam is bottled, then optionally pasteurized 20–30 min in the same blanching tank.
