Fonctionnement
A jacketed stainless-steel cylinder is loaded with chocolate mass and 30 kg of 10 mm high-hardness steel balls. The 1.1 kW main motor agitates the charge so the balls cascade through the chocolate, refining particle size by impact and shear. Cooling water (5-25°C, 1 t/h) circulates through the jacket to remove process heat and keep the chocolate within tempering temperature.
