Fonctionnement

Chocolate slurry is loaded into the 50 L jacketed tank and pressurized by the high-pressure slurry pump; the hot-water jacket (circulating, temperature-adjustable) keeps the slurry fluid throughout the pipeline. At the discharge end an atomizing spray gun or dripper distributes the slurry evenly onto the coating pan substrate. The slurry temperature and jacket water temperature are independently adjustable. A user-supplied refrigeration system cools the coated surface to solidify the chocolate layer.
