Hot sugar mass is hung over rotating pull-rods that fold and stretch the sugar repeatedly, incorporating air and aligning sugar fibers. The base motor drives the rod assembly at 45 rpm (or VFD 20–45 rpm) to give the operator control over pulling speed and finished texture.
