Electric heating elements warm the chamber air; a fan forces hot air through an adjustable air-distribution baffle and across the product on multiple trays loaded on a trolley. Most of the heat is recirculated, while make-up fresh air is admitted and humid air exhausted continuously, removing moisture while maintaining oven setpoint within ±2 °C top-to-bottom.

Pre-production cleaning and post-shift cleaning required. Clean chamber interior and trays after each batch. Do not use corrosive solvents on stainless surfaces. Disconnect power before cleaning.
