Fonctionnement
Heat is generated by steam coil, conduction-oil coil, hot-water coil or electric heaters. An axial fan forces air through an adjustable distribution baffle past the heater bank and across product loaded on 48 SUS304 trays (460 x 640 x 45 mm) on 2 SUS304 trolleys. Most of the air recirculates; a damper-controlled exhaust expels moisture-laden air when humidity reaches setpoint, and an inlet damper admits fresh air. Temperature controller (digital, with set/measure/upper-lower-limit modes) modulates heat to maintain +/-2°C internal uniformity. Total chamber 14.1 m^2 evaporated area, 2.6 m^3 effective volume, 23 m^2 radiator area.
