The smooth inner surface of the drying chamber captures moisture (acting as the cold trap). The evaporator surrounds the outside of the stainless-steel drying chamber. The compressor operates at high pressure to melt frost and maintain refrigeration. Shelf temperature is controlled for the drying cycle.
