Fonctionnement
Product is loaded onto temperature-controlled shelves and frozen. A vacuum pump reduces chamber pressure, causing ice to sublimate directly from the frozen product without passing through a liquid phase. The vapour is captured by the condenser (cold trap). Shelf temperature is then gradually raised according to a programmed drying curve to complete primary and secondary drying.
