Funcionamiento
Steam heater or electrical heating element (or far-infrared option) generates heat. Convective axial-flow fans circulate heated air through the oven; an adjustable air-distribution board (window-shade type) ensures uniform air flow over all trays. Fresh air is admitted and wet air exhausted via the dehumidification damper as product humidity rises. Hot air recirculates within the oven for high thermal efficiency and energy conservation. Temperature is monitored and controlled via built-in temperature sensors and a control system. When steam-heated, steam pressure should be 0.4–0.8MPa for 120–140°C and 0.2–0.4MPa for 80–120°C.
Proceso de funcionamiento
