Funktionsweise
Chocolate slurry is heated and held in the insulated spray cabinet (slurry up to 80°C, water jacket up to 99°C); an atomizing pump pressurizes and conveys it through heat-preserved piping to the spray gun above the 1250 mm rotating coating pan. As the pan tumbles material, the cooling system blows cold air (-5°C to ambient) over the pan to rapidly solidify each chocolate layer. Repeated coating + cooling cycles build up the final shell.
Prozessbeschreibung
1Chocolate slurry is heated and held in the insulated spray cabinet (slurry up to 80°C, water jacket up to 99°C); an atomizing pump pressurizes and conveys it through heat-preserved piping to the spray gun above the 1250 mm rotating coating pan.
2As the pan tumbles material, the cooling system blows cold air (-5°C to ambient) over the pan to rapidly solidify each chocolate layer.
