Funktionsweise
Freeze drying utilises the sublimation principle. The substance is rapidly frozen at low temperature, then placed in an appropriate vacuum environment where frozen water molecules sublimate directly into water vapour. The substance remains in a frozen state throughout drying; ice crystals are evenly distributed in the material, so concentration does not occur during sublimation, and side effects such as foam and oxidation caused by water vapour are avoided. The dried product is sponge-like, non-shrinking, and has excellent rehydration characteristics.
