A 12.7 mm diameter cylindrical probe is driven into the surface of a 6.67% gelatin gel sample(cooled at 10±0.1°C for 16–18 hours in a 150 mL gel bottle) to a 4 mm depression. The force required is reported as gel strength in Bloom g. Computer dynamic monitoring eliminates probe insertion depth error. Auto nonlinear correction and over-range protection ensure accuracy.
